Tuna salad

Who doesn’t love making a lunch with enough portions for the whole week?

  • Servings : 6 to 8

Ingredients

Salad

 

  • 500ml (2 cups) cooked whole wheat pasta
  • 500ml (2 cups) cooked white pasta
  • 3 colored peppers, diced
  • 5-6 Kale branches, chopped
  • 2 cucumbers, diced
  • 125ml (1/2 cup) green olives
  • 1 red onion, chopped
  • 1 can of 540ml (19oz) chickpeas, drained
  • 4 cans of tuna, drained

Dressing

  • 175-250ml (3/4 to 1 cup) Greek yogurt
  • 60ml (1/4 cup) mayonnaise
  • Dried herbs of your choice such as oregano, basil, thyme …
  • Juice of 1 lemon
  • salt and pepper to taste

Methods

  1. Combine all the salad ingredients.
  2. Combine all the dressing ingredients.
  3. Every day, simply add the dressing to your salad.
