Mango and shrimp salad

Poke bowl or salad? It’s up to you, but one thing is certain: the freshness of the mango makes this salad very summery! ☀️

Mango and shrimp salad

  • Servings : 3 to 4
  • Preparation : 30 minutes
  • Cooking : 10 minutes


For the salad

  • 1 mango, diced
  • 1 cucumber, diced
  • 1 red pepper, diced
  • 1/2 red onion, diced
  • 500-750ml (2-3 cupz) rice, cooked
  • A handful of fresh coriander, thinly sliced
  • Juice of 1/2 lime (optionnal)

For the shrimps:

  • 400-500g (1lb) of nordic shrimp, shelled
  • 30ml (2 tbsp) + 15ml (1 tbsp) olive oil
  • 30ml (2 tbsp) lime juice
  • Zest of 1 lime
  • 5ml (1 tsp) cumin
  • 2,5ml (1/2 tsp)  Sambal Oelek (or to taste)
  • 2 cloves of garlic, chopped


  1. In a large bowl, combine all the salad ingredients.
  2. In a smaller bowl, combine all of the shrimp ingredients except the garlic and 1 tbsp of olive oil. Marinate for about fifteen minutes.
  3. Brown the garlic for 2-3 minutes in the oil. Add the shrimp with the marinade and cook until the shrimp are heated through.
  4. Serve hot or cold. Add lime juice to taste.
